The beans are swallowed and then defecated by the Luwak, a species of small civet that lives in the Indonesian forests; the gastric enzymes that seep into the beans while they are in the civets’ stomachs give the coffee an amazing, chocolate aroma and an unrivalled body.

For the tasting, we´ve made a espresso at 92°C with an extraction of 25ml in 23 seconds. The average degassing has been done for 60 hours. The cream is dense and dark without grey nuances. Its aroma is of cocoa and toast. The body is round and the aftertaste sweet.
